To set up the SERVER FSPW-SS Topping Warmer with Heated Pump, follow these steps:
1. Ensure that the unit is earthed or grounded by plugging all three prongs of the cord plug into the power source.
2. Check with local food and safety regulators for specific guidelines on storing and serving food at the required temperatures.
3. Make sure the pouch support is inside the warmer.
4. Plug the cord into the power source and press the switch on.
5. Pre-heat the unit for at least 15 minutes with the pump installed and the thermostat xxxx set at the maximum setting.
6. Attach the pump to the pouch by placing the pouch on the countertop with the pouch fitment circle facing upward. Position the pump connector directly over the center of the pouch fitment and press it down to pierce through the film in the pouch fitment. The pump is fully engaged when the top surface of the pouch fitment touches the pump connector rim.
7. Install the pump and pouch combo into the warmer by holding the pump with the pouch wrapped up around both sides of the pump. Fold the sides of the pouch up around the pump to assist with food flow and allow the pump to fit.
8. Set the thermostat xxxx to the recommended serving temperature. The dial indicator uses increments of 10º F, and the thermostat maximum is 230º F/110º C.
9. For rethermalization, pre-heat the unit for at least 15 minutes with the pump installed and the thermostat xxxx set at the maximum setting. Then, add the food product by attaching the food pouch to the pump and putting it into the basin. The maximum capacity of pouched food product is 48 fl oz. Maintain the food temperature at or above 150°F (66°C) after it reaches the safe serving temperature of 165°F (74°C).
10. For hot food holding, pre-heat the unit for at least 15 minutes with the pump installed and the thermostat xxxx set at the maximum setting. Put food that has already been preheated to 150°F (66°C) into the basin. Maintain the food temperature at or above 150°F (66°C) for a minimum of 2 hours, even if any lid, cover, or pump is removed.
11. Monitor the food closely for food safety. Hot food should be held at a minimum of 140°F (60°C) to prevent bacteria growth. Do not add cold food to the unit for rethermalization while hot food is being held.
12. When you are done using the unit, press the switch to the "OFF" position and unplug the cord. Allow the unit to cool before continuing.
13. Remove the pump for cleaning. Refer to the separate pump manual for instructions.
14. Clean the unit by washing the removable parts with dishwashing soap and hot water. Rinse them fully with clear water and sanitize all parts according to local sanitization requirements. Dry all parts fully with a clean soft cloth.
15. Clean the external surfaces of the unit by wiping them daily with a clean damp cloth. Dry with a clean soft cloth. You can use glass and surface cleaners approved for use in food contact areas.
16. Take care of the stainless steel surfaces by using a mildly abrasive nylon or brass brush to remove any stubborn food or mineral deposits. Fully rinse and dry all parts to prevent corrosion. Avoid using abrasive, caustic, or ammonia-based cleansers, as well as products containing acids, alkalines, chlorine, or salt. Do not use metal scrapers or cleaning pads that could scratch surfaces.
17. If you encounter any issues with the unit, refer to the troubleshooting section in the manual. Ensure that the cord is securely plugged in, power is available from the source, the unit is on, and the thermostat xxxx is set correctly. Avoid getting any electrical components wet, as moisture may cause the unit to trip the breaker or GCFI.
