To pre-season the Royal Gourmet SE2801 28 Inch Electric Smoker, follow these steps:
1. Make sure the water pan is in place, but do not add any water to it.
2. Set the control panel to the MED (medium) setting.
3. Plug in the power cord into an approved grounded electric outlet.
4. Allow the smoker to run for 3 hours.
5. After 2 hours and 15 minutes, add 1 cup of wood chips to the wood chip box.
6. Wear protective gloves/mitts when adding the wood chips, as the surfaces may be hot.
7. Continue running the smoker for the remaining 45 minutes.
8. After the 3-hour pre-seasoning process, shut down the smoker and allow it to cool completely before using it for cooking.
During the pre-seasoning process, it is normal for some smoke to appear. If wood chips flare up when you open the smoker door, immediately close the door and wait for the wood chips to burn out before opening the door again. Do not spray water on the flare-up.
